Homemade vegetable stew 

I really fancied some soup, and I decided I’d make one from scratch rather than buying a store bought one with loads of unnecessary ingredients. This was completely impulsive so I had to make do with the following ingredients, which were what I happened to have in the fridge:

  • Potato (cubed)
  • Sweet potato (cubed)
  • Onions (diced)
  • Cabbage
  • Broccoli
  • Mushroom (sliced)

I didn’t follow a recipe for this meal, I simply washed and chopped up my vegetables ready to cook. First I browned the onions and mushrooms in some olive oil for around 10 minutes. I then added my cubes of potatoes, cooking these on a low heat for a further 5 minutes. After this time, I added 1.5 litres of boiling water to the pot, along with some cabbage. I cooked this mixture for 10 minutes, then added my broccoli. I cooked the resulting stew for a further 5 minutes and then seasoned to taste.

What resulted was a cheap, tasty and healthy meal that went down a treat with my family. Unfortunately it went down too well, and they ate it all that night, leaving me with no leftovers to have for lunch the next day! Ah well, it’s a hazard of the job!

Preparation time: 5 minutes pre-prep, 30 minutes actually cooking

Difficulty: 1/10. You just need to make sure you don’t burn/overcook your vegatables!

Would I make this again?: Absolutely! Soup is good for the soul 🙂
